Fermaid K yeast nutrient – how do you use it? Follow Lallemand’s protocol

Fermaid K is a complete yeast nutrient containing both organic nitrogen and inorganic nitrogen from DAP (diammonium phosphate), together with vitamins, minerals, sterols and yeast-derived nutrients. Correct dosage and timing help support yeast development and reliable fermentation.

• Standard dosage
  35–40 g per hL (max. 40 g per hL)
• Dissolving
  Disperse in approximately 10 times its weight in water or must before addition during fermentation.
• Optimal addition strategy
  Split the addition to provide nutrients during the active stages of yeast growth.
• First addition
  At the end of the lag phase, typically 6–12 hours after yeast inoculation.
• Second addition
  When approximately 1/3 of the sugar has been consumed.
• Why split the addition?
  This helps provide nutrients when the yeast can effectively use them and supports stable fermentation kinetics.
• Wine, cider and mead
  Fermaid K can be used for grape must, apple must and mead, including nutrient-poor musts where additional yeast nutrition may be required.
• DAP and organic nitrogen
  Unlike pure DAP, which supplies inorganic nitrogen, Fermaid K combines DAP with organic nitrogen and additional yeast nutrients in one complete formulation.
• For difficult fermentations
  Fermaid K can also form part of a carefully planned protocol for sluggish or stuck fermentations and the preparation of an active yeast starter.
