Cider Yeast – How to Use

You will need a suitable thermometer, as temperature control during yeast rehydration is essential for achieving the best fermentation results. 

 

  1. Heat clean water to a temperature between 38–42°C. Use a volume of water equal to ten times the weight of the yeast being rehydrated.
  2. Gently stir the yeast into the water and allow it to rehydrate for 20 minutes.
  3. After 20 minutes, gradually add the juice or must to be fermented to the yeast suspension every 5 minutes, lowering the temperature by approximately 5°C each time. This allows the yeast to acclimatise gradually before pitching.
  4. When the temperature difference between the yeast suspension and the fermentation vessel, carboy or tank is less than 10°C, the yeast can be added.

Please note: Directly pitching the dry yeast into the fermentation bucket, carboy or tank is not recommended if you want the best possible fermentation performance.
