For reliable fermentation, Lallemand recommends rehydrating Lalvin R2 with Go-Ferm Protector Yeast Rehydration Nutrient together with Fermaid O Organic Yeast Nutrient.

Correct Yeast Rehydration – Step by Step

1. Dissolve 30 g of your chosen Go-Ferm product in water at 40–43°C.
2. Add 25 g Lalvin R2 wine yeast at 35–40°C and leave for 20 minutes.
3. Add Fermaid O Organic Yeast Nutrient.
4. Gradually acclimatise the yeast to the must. The temperature difference should not exceed 10°C before pitching.
5. Pitch the yeast into the fermenter, wine vessel or tank within 30 minutes.

Nitrogen Requirements During Fermentation

Lalvin R2 has a relatively high nitrogen requirement. For optimum fermentation performance, Lallemand recommends combining the yeast with a Go-Ferm yeast rehydration nutrient during rehydration and Fermaid O organic yeast nutrient during fermentation. This significantly improves yeast vitality, fermentation security and aroma expression, particularly in high gravity musts and low-temperature fermentations.

For reliable fermentation, Lallemand recommends rehydrating Lalvin R2 with Go-Ferm Protector Yeast Rehydration Nutrient together with Fermaid O Organic Yeast Nutrient.

Correct Yeast Rehydration – Step by Step

1. Prepare your chosen Go-Ferm yeast rehydration nutrient according to the product instructions and dissolve completely.
2. When the solution reaches 35–40°C, sprinkle Lalvin R2 evenly onto the surface and stir gently until fully dispersed.
3. Leave to rehydrate for 20 minutes and stir gently again.
4. Add Fermaid O Organic Yeast Nutrient according to the recommended dosage.
5. Slowly add grape must or apple must to acclimatise the yeast. The temperature difference between the yeast suspension and the fermentation must should never exceed 10°C to avoid cold shock.
6. Complete the entire rehydration and acclimatisation process within 30 minutes before pitching.
