The dosage of citric acid depends on the raw material, recipe and desired acid balance. For elderflower cordial and summer drinks, citric acid is normally added according to the recipe, as the sugar content, flowers, fruit and amount of water have a major impact on the final flavour.
Always start carefully if you are adjusting the flavour yourself. Citric acid can quickly lift a flat drink, but too high a dosage can result in an overly sharp acidity. Add a little at a time, stir thoroughly and adjust the flavour until the balance between sweetness, freshness and aroma is right.
Citrol Citric Acid is also used for cider, apple juice, fruit wine and winemaking, where the acidity level is adjusted to create a better balance between sweetness and freshness.
In both cider and juice, citric acid can contribute to a fresher and more vibrant flavour profile, especially when using sweet apples, ripe berries or flower-based beverages.
For cider, juice, mead and wine, citric acid should be dosed with care. Acid adjustment should preferably be carried out based on flavour, pH measurement and the overall acid balance of the product.
As a practical starting point, citric acid should be added in small quantities at a time. Dissolve the citric acid in a small amount of liquid, add it to the full batch and mix thoroughly. Taste and measure again before adding more.
For larger productions, it is recommended to prepare a small test batch first, so the desired freshness and balance can be evaluated before adjusting the entire container.
Citric acid and sulphite are often used together for cleaning and disinfection of equipment used for wine, cider, brewing and juice production.

For disinfection together with sulphite, citric acid is used as part of a sulphite solution. A common dosage is 0.5 g citric acid per litre of water together with the selected sulphite dosage.
For cleaning and disinfection of equipment, the solution should be mixed thoroughly so both sulphite and citric acid are dissolved. The solution can be used for bottles, containers, hoses and equipment that must be clean before contact with juice, wine, cider or mead.
Citric acid is also used as a cleaning agent for removing lime scale, deposits and impurities from equipment used in food production.
