Fermaid K yeast nutrient, how do you use it? Follow Lallemand’s protocol

Fermaid K is a complete yeast nutrient that ensures optimal fermentation by supplying both organic and inorganic nitrogen, vitamins, sterols and cell wall components. Correct dosage and timing are crucial for maximum yeast performance and a clean, fault-free fermentation.

  • Standard dosage
    35–40 g per hL (max. 40 g per hL)
  • Dissolving
    Dissolve in 10 times its weight in water or must before addition during fermentation
  • Optimal addition strategy
    It is recommended to split the addition in order to support the yeast’s needs throughout the entire fermentation:
  • First addition
    At the end of the lag phase (typically 6–12 hours after yeast addition)
  • Second addition
    When approx. 1/3 of the sugar has been consumed
  • Why split the addition
    Ensures optimal cell division, stable fermentation kinetics and reduces the risk of sulphur formation and faulty fermentation
  • For clarified musts and mead production, Fermaid K is particularly effective, just as Fermaid K can be used in a stuck fermentation as a yeast starter, to rebuild an active yeast population
  • Technological effect
    Under oxygen-limited conditions the product contributes sterols and lipids which increase the yeast’s alcohol tolerance
  • Sensory result
    Provides a cleaner aromatic profile, higher complexity and improved mouthfeel – especially in nutrient-poor musts
